An experiment in a vegetarian lifestyle

No, I'm not conducting this experiment.  My 9 year old son is.  The thing about him is that he is brilliant.  Already at nine, I truly believe he is already smarter than I am.  Maybe not smarter than my husband, but he is smarter than me.  I might "know" more things (maybe), but the way he thinks is incredible.  He wants to know about everything....yesterday he researched Bob Marley and how he died and today he wanted to know what kind of government Spain has.  He decided this week that he wants try being a vegetarian for a month.  Not because he is opposed to eating meat or opposed to how they are killed, but because he just wants to know what its like to be a vegetarian.  He wants to understand it.  So, because I love him...because I want him to have as many experiences as he can....because I don't want to hinder his intellectual growth....because I am impressed with his goal...(I think I could continue this list for a while...) I am going to support him as much as I can.  Tonight we are having taco soup.  I cooked the ground beef first and then took it out of the pot.  I put in everything else and I am going to take out enough for him to eat tonight and tomorrow night and then I will add the beef back in. This is going to be hard for me but I am going to do this because I love him.


Taco Soup

1 lb ground beef
1 can pinto beans
1 can black beans
1 can corn (not drained)
1 package taco seasoning
Doritos
shredded cheddar cheese
sour cream

Brown the ground beef.  Add the pinto beans, black beans, corn, and taco seasoning.   Heat.  Serve with Doritos, cheese, and sour cream.
